  • 2 large heads cauliflower
  • ¼ cup olive oil
  • 2 limes (zest 1, juice both)
  • 1 tbsp honey
  • 2 tbsp guajillo or chili powder
  • 1 tbsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp ground cumin
  • Fresh cilantro for garnish

Instructions

  1. Preheat your grill to 425°F (218°C).
  2. Remove leaves from cauliflower and slice into ¾-inch steaks.
  3. In a mixing bowl, whisk together lime zest, lime juice, olive oil, honey, guajillo or chili powder, chipotle powder, garlic powder, kosher salt, and ground cumin.
  4. Brush marinade generously over each cauliflower steak.
  5. Grill on one side for about 5 minutes; flip and baste again with marinade before grilling for an additional 5 minutes.
  6. Serve topped with chopped cilantro and lime wedges.
