Ingredients
- 2 large heads cauliflower
- ¼ cup olive oil
- 2 limes (zest 1, juice both)
- 1 tbsp honey
- 2 tbsp guajillo or chili powder
- 1 tbsp chipotle powder
- 1 tsp garlic powder
- 1 tsp kosher salt
- ½ tsp ground cumin
- Fresh cilantro for garnish
Instructions
- Preheat your grill to 425°F (218°C).
- Remove leaves from cauliflower and slice into ¾-inch steaks.
- In a mixing bowl, whisk together lime zest, lime juice, olive oil, honey, guajillo or chili powder, chipotle powder, garlic powder, kosher salt, and ground cumin.
- Brush marinade generously over each cauliflower steak.
- Grill on one side for about 5 minutes; flip and baste again with marinade before grilling for an additional 5 minutes.
- Serve topped with chopped cilantro and lime wedges.
