  • Zest and juice from 1 large orange
  • 0.5 T olive oil
  • 1 T brown sugar
  • 1 tsp chipotle chili powder
  • 0.5 tsp cumin
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Soak the cedar plank in beer and water for at least 4 hours.
  2. Whisk together orange zest, orange juice, olive oil, brown sugar, chipotle powder, and cumin.
  3. Place the soaked plank on the grill and preheat to medium-high heat (415°F).
  4. Position the salmon skin-side down on the plank, coat generously with marinade, sprinkle with salt and pepper.
  5. Grill for 25 to 30 minutes until the salmon flakes easily.
