Ingredients
- 4 boneless skinless chicken breasts (6 oz each)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- 1.5 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon turmeric
- 1/3 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Pound chicken breasts to an even thickness using a meat mallet.
- In a mixing bowl, whisk together olive oil, lemon juice, garlic, ginger, cumin, coriander, paprika, cinnamon, turmeric, cilantro, salt (3/4 – 1 tsp), and pepper (1/2 tsp).
- Place chicken in a resealable bag and pour marinade over it. Seal the bag and rub marinade into the chicken.
- Refrigerate for at least 2 hours or up to 8 hours.
- Preheat grill to medium-high heat (425°F).
- Grill marinated chicken for about 4 minutes per side until internal temperature reaches 165°F.
- Let rest for 5 minutes before serving.
