  • 4 teaspoons extra virgin olive oil
  • Juice of 1/2 lime
  • 4 boneless skinless chicken thighs (4 oz each)
  • 2 corn on the cobs, husked
  • 2 romaine hearts
  • 4 oz avocado, sliced
  • 2 tablespoons diced red onion
  • 1/2 cup halved grape tomatoes

Instructions

  2. Season chicken thighs with kosher salt, oregano, and cumin.
  3. Preheat grill to medium heat; halve romaine hearts vertically and spray cut sides with olive oil.

  5. Grill romaine cut-side down for 1-2 minutes until slightly wilted.
