  • 4 wild salmon fillets (6 oz each)
  • 1/4 cup chopped red onion
  • 2 medium vine ripe tomatoes
  • 2 tablespoons fresh basil leaves (chopped)
  • 4 ounces diced avocado
  • 1 tbsp extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 tsp kosher salt
  • black pepper

Instructions

  1. In a mixing bowl, combine chopped red onion, olive oil, balsamic vinegar, kosher salt, and black pepper. Let it sit for 5 minutes.
  2. Chop the tomatoes and add them to the bowl along with minced garlic and chopped basil. Season to taste and let rest for at least 10 minutes.
  3. Preheat the grill to medium-high heat and oil the grates.
  4. Season salmon fillets with salt and pepper; grill skin-side down for 8-10 minutes until cooked through.
  5. After grilling, cover the salmon with foil for 2-3 minutes to rest.
  6. Mix diced avocado into the bruschetta mixture and then top each salmon fillet with approximately 1/2 cup of the mixture before serving.
