Ingredients
- 2 medium zucchini (about 2 pounds)
- 1 lb lean ground beef
- 1 small onion (diced)
- 2 garlic cloves (minced)
- 28 oz can diced tomatoes (drained)
- 2 cups shredded mozzarella cheese
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Slice zucchini and salt them for 15 minutes to remove moisture; rinse and pat dry.
- In a large skillet, heat olive oil over medium-high heat. Sauté onions until soft, add garlic and ground beef until browned.
- Stir in drained tomatoes, Italian seasoning, salt, and pepper; remove from heat.
- In an 8×8 baking dish, layer half of the beef mixture, half of the zucchini slices, and half of the cheese. Repeat layers.
- Bake for 20-25 minutes until cheese is melted. Let rest before serving.
