  • 2 medium zucchini (about 2 pounds)
  • 1 lb lean ground beef
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 28 oz can diced tomatoes (drained)
  • 2 cups shredded mozzarella cheese
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice zucchini and salt them for 15 minutes to remove moisture; rinse and pat dry.
  3. In a large skillet, heat olive oil over medium-high heat. Sauté onions until soft, add garlic and ground beef until browned.
  4. Stir in drained tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  5. In an 8×8 baking dish, layer half of the beef mixture, half of the zucchini slices, and half of the cheese. Repeat layers.
  6. Bake for 20-25 minutes until cheese is melted. Let rest before serving.
