  • 2 cups cooked jasmine rice
  • 1 lb boneless skinless chicken thighs
  • 1 cup fresh pineapple (cut into chunks)
  • 1 small red onion (sliced)
  • 1 large carrot (shredded)
  • 1 whole avocado (sliced)
  • 1 cup baby cucumbers (sliced)
  • 3 tbsp soy sauce
  • 2 tbsp pineapple juice
  • 1 tbsp sesame oil
  • 2 cloves grated garlic
  • 1 tbsp grated ginger
  • 1 tbsp maple syrup
  • 1 tbsp tomato paste
  • 1 tbsp sriracha
  • 1 cup cooked edamame beans
  • 1 tbsp toasted sesame seeds
  • 2 stalks spring onions (chopped)

Instructions

  1. Cook jasmine rice according to package instructions and set aside.
  2. In a mixing bowl, combine garlic, ginger, soy sauce, maple syrup, vinegar, tomato paste, pineapple juice, sriracha, and sesame oil. Add chicken thighs and marinate for at least 15 minutes.
  3. Heat a skillet over medium heat and cook the marinated chicken for about 5–7 minutes on each side until fully cooked. Let rest before slicing.
  4. In serving bowls, layer rice as the base and top with sliced chicken, pineapple chunks, shredded carrot, avocado slices, cucumber, red onion, and sprinkle with toasted sesame seeds.
