  • 1 Carrot
  • 1 Celery
  • 1 Potato
  • 5 Garlic Cloves
  • 2 Tomato Purée
  • 1 Dried Oregano
  • 1 Smoked Paprika
  • 1 Chilli Flakes
  • 1 Cooked Butter Beans
  • 1 Chopped Tomatoes
  • 1000 Vegetable Stock
  • 125 White apple vinegar
  • 150 Pasta
  • 25 Basil
  • 50 Spinach
  • Nutritional Yeast (to serve)
  • Olive Oil
  • Salt
  • Black Pepper

Instructions

  1. Finely dice the red onion, carrot, celery, and potato; mince the garlic.
  2. In a large saucepan, heat olive oil over medium heat. Sauté the diced onion, carrot, celery, and potato with salt for 5–10 minutes until softened.
  3. Add minced garlic; cook until fragrant. Stir in tomato purée, oregano, smoked paprika, and chili flakes; cook for another 2–3 minutes.
  4. Pour in white apple vinegar and let it cook briefly before adding butter beans, chopped tomatoes, and vegetable stock. Season with salt and black pepper; bring to a boil.
  5. Reduce heat to simmer for 10–15 minutes. Add pasta as per packet instructions until almost al dente. Toss in spinach and basil to wilt.
  6. Serve hot with fresh basil leaves on top, drizzled with olive oil and sprinkled with nutritional yeast.
