  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your muffin tin or line it with muffin liners.
  3. In a mixing bowl, combine pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence; whisk until smooth.
  4. In another bowl, mix together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients while gently stirring until just combined.
  6. Scoop the batter into each muffin cup until about two-thirds full.
  7. Bake for approximately 18 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack.
