  • 2 oz cream cheese
  • 2 tablespoons basil pesto
  • 1 egg
  • 2/3 cup breadcrumb mix
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cream cheese, basil pesto, salt, and pepper. Mix until smooth.
  3. Create a pocket in each chicken breast using a knife and fill generously with the pesto mixture.
  4. Lightly beat the egg in another bowl and dip each stuffed breast into it, then coat with breadcrumb mix.
  5. Drizzle olive oil in a baking dish and place the chicken inside. Bake for about 20 minutes until cooked through (internal temperature should reach 165°F / 75°C).
