  • 1 tablespoon salt
  • 1 tablespoon active dry yeast
  • 1 1/4 cups warm milk
  • 2 tablespoons unsalted butter, melted
  • 1 cup cold unsalted butter
  • For egg wash: 1 egg and 1 tablespoon milk

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Dissolve yeast in warm milk; let it sit until foamy. Mix this into the dry ingredients along with melted butter. Knead until smooth (3–5 minutes). Shape into a rectangle, wrap in plastic, and refrigerate for an hour.
  2. Shape cold butter between parchment sheets into a square. Roll out dough into a larger square and enclose the butter completely.
  3. Roll into a long rectangle and fold like a letter to create layers. Chill after each of three turns.
  4. Roll dough thinly, cut triangles, and shape into croissants by rolling from the wide end to the tip.
  5. Allow croissants to rise until puffy (1.5 to 2 hours), then brush with egg wash and bake at 400°F for 18–22 minutes until golden brown.
