Ingredients
- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon salt
- 1 tablespoon active dry yeast
- 1 1/4 cups warm milk
- 2 tablespoons unsalted butter, melted
- 1 cup cold unsalted butter
- For egg wash: 1 egg and 1 tablespoon milk
Instructions
- In a mixing bowl, combine flour, sugar, and salt. Dissolve yeast in warm milk; let it sit until foamy. Mix this into the dry ingredients along with melted butter. Knead until smooth (3–5 minutes). Shape into a rectangle, wrap in plastic, and refrigerate for an hour.
- Shape cold butter between parchment sheets into a square. Roll out dough into a larger square and enclose the butter completely.
- Roll into a long rectangle and fold like a letter to create layers. Chill after each of three turns.
- Roll dough thinly, cut triangles, and shape into croissants by rolling from the wide end to the tip.
- Allow croissants to rise until puffy (1.5 to 2 hours), then brush with egg wash and bake at 400°F for 18–22 minutes until golden brown.
