Ingredients
- 2 lbs boneless chicken thighs or breasts
- 1 fresh pineapple, cut into rounds
- 1/2 cup coconut aminos
- 1/4 cup pineapple juice
- 1/4 cup tomato paste
- 4–6 pitted dates (soaked)
- 2 tsp garlic powder
- 2 tsp chili powder
- 1 tsp smoked paprika
Instructions
- Soak the dates in warm water for 10-15 minutes.
- In a blender, combine pineapple rounds, coconut aminos, pineapple juice, tomato paste, soaked dates, garlic powder, chili powder, and smoked paprika. Blend until smooth.
- Place chicken in a shallow dish and pour marinade over it. Toss to coat evenly; cover and refrigerate for at least 30 minutes (up to 24 hours).
- Preheat grill to high heat (500°F). Remove chicken from marinade and grill alongside pineapple slices until cooked through (about 5-6 minutes per side for chicken; 3-4 minutes per side for pineapple).
