Ingredients
- 1 lb orzo
- 1/2 lb kalamata olives, pitted and chopped
- 12 oz sun-dried tomatoes in oil, drained and diced
- 1 cup spinach, sliced thin
- 1/2 lb feta cheese, crumbled
- 3 tbsp fresh basil, thinly cut
- 3 tbsp fresh mint, thin strips
- 3 tbsp extra-virgin olive oil
- 3 tbsp fresh lemon juice
- Zest from 1 lemon, grated
- 1/2 tsp salt
- 1/2 tsp black pepper, ground
- 2 qt water
Instructions
- In a large pot, boil 2 quarts of water with 1/2 tsp salt. Add orzo; cook until al dente (8-10 minutes). Drain and rinse under cold water.
- Chop olives, red onion, sun-dried tomatoes, spinach, basil, and mint. Combine in a mixing bowl.
- Whisk together olive oil, lemon juice, zest, and black pepper in a small bowl.
- Add cooked orzo to the vegetable mixture. Pour dressing over and toss gently. Fold in crumbled feta.
