  • 1/2 lb kalamata olives, pitted and chopped
  • 12 oz sun-dried tomatoes in oil, drained and diced
  • 1 cup spinach, sliced thin
  • 1/2 lb feta cheese, crumbled
  • 3 tbsp fresh basil, thinly cut
  • 3 tbsp fresh mint, thin strips
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • Zest from 1 lemon, grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper, ground
  • 2 qt water

Instructions

  1. In a large pot, boil 2 quarts of water with 1/2 tsp salt. Add orzo; cook until al dente (8-10 minutes). Drain and rinse under cold water.
  2. Chop olives, red onion, sun-dried tomatoes, spinach, basil, and mint. Combine in a mixing bowl.
  3. Whisk together olive oil, lemon juice, zest, and black pepper in a small bowl.
  4. Add cooked orzo to the vegetable mixture. Pour dressing over and toss gently. Fold in crumbled feta.
  5. Enjoy immediately or chill for an hour for enhanced flavors.
