Ingredients
- 3 pounds roma or plum tomatoes
- 8 cloves garlic
- 3 tablespoons olive oil
- 2 yellow onions
- ½ cup basil leaves
- 1–2 cups water or vegetarian broth
- Salt and pepper
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Place halved tomatoes and garlic on the baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 40-45 minutes until caramelized.
- Meanwhile, heat olive oil in a large pot over medium heat. Add sliced onions and cook until golden brown (about 20 minutes).
- Once roasted, cool the tomatoes and garlic slightly before blending them with basil and caramelized onions until smooth.
- Return the mixture to the pot, stir in oregano, broth or water, adjust seasoning as needed, and simmer for about 10 minutes before serving.
