Description

2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 3/4 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream or plain yogurt
1/2 cup whole milk
1 1/2 cups fresh strawberries, finely chopped or pureed

For the Strawberry Frosting (Optional):
1/2 cup unsalted butter, softened
3 cups powdered sugar
1/4 cup strawberry puree (reduced for stronger flavor)
1/2 teaspoon vanilla extract
1–2 tablespoons milk, as needed for consistency


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. In a large bowl, beat the butter and sugar together until light and fluffy, about 3–4 minutes.

  4. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.

  5. Stir in the sour cream until combined.

  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined.

  7. Fold in the chopped or pureed strawberries gently. Do not overmix.

  8. Divide the batter evenly between the prepared pans and smooth the tops.

  9. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

  10. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

  11. For the frosting, beat butter until creamy. Gradually add powdered sugar. Mix in strawberry puree and vanilla. Add milk as needed to reach a spreadable consistency.

  12. Frost the cooled cake layers and decorate as desired. Slice and serve.
