  • ¼ cup chopped cilantro
  • 1 teaspoon salt
  • 2 cups cooked white rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 large avocado, sliced
  • ½ cup sour cream or Greek yogurt
  • 1 cup chopped romaine lettuce
  • ½ cup diced tomatoes or salsa

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. In a mixing bowl, combine honey, chipotle peppers, lime juice, garlic, olive oil, and salt. Add chicken thighs and marinate for at least 30 minutes.
  3. Lightly oil the grill or skillet. Cook rice according to package instructions.
  4. Grill the marinated chicken for about 5 to 6 minutes per side until fully cooked (internal temperature should reach 165°F). Let rest before slicing.
