  • 1 large egg yolk (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup peach slices (for garnish)
  • 1 tablespoon honey drizzle
  • 1/2 cup crushed graham cracker crumbs (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine all-purpose flour, baking powder, and salt. Whisk together until well blended.
  3. In another bowl, use an electric mixer to beat unsalted butter until creamy. Add granulated sugar and beat until light and fluffy.
  4. Add eggs one at a time to the butter mixture, mixing well after each addition. Then stir in honey until fully incorporated.
  5. Gradually add the dry mixture to the wet mixture while alternating with whole milk. Mix until just combined. Gently fold in diced fresh peaches.
  6. In a separate bowl, mix cream cheese and granulated sugar until smooth. Add egg yolk and vanilla extract, and beat until smooth.
  7. Spoon half of the cupcake batter into each lined cupcake compartment. Add about a tablespoon of cream cheese filling on top. Then top with the remaining batter.
  8. Bake in the preheated oven for about 22 minutes or until a toothpick inserted comes out clean. Let them cool before serving.
