  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 2 cups oats (quick cooking or old fashioned)
  • 4 tablespoons milk
  • 2 cups powdered sugar (sifted)
  • water as needed

Instructions

  1. Cream the shortening and sugars in a large bowl until light and fluffy.
  2. Beat in the water and vanilla until well combined.
  3. In another bowl, mix together flour, baking soda, salt, nutmeg, and cinnamon; gradually add to the creamed mixture until combined.
  4. Gently fold in oats until evenly distributed.
  5. Drop dough onto greased baking sheets using a medium cookie scoop.
  6. Bake at 350°F (175°C) for 10–12 minutes or until golden brown. Let cool for 2 minutes on the baking sheet before transferring to a wire rack.
  7. For icing, mix milk and powdered sugar until smooth, adding water as needed for desired consistency.
  8. Dip the tops of cooled cookies into icing and let excess drip off before placing back on the wire rack.
