  • 2 cups powdered sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, and salt.
  3. In another bowl, mix vegetable oil and eggs until fluffy. Gradually combine with dry ingredients until just mixed.
  4. Fold in shredded carrots and nuts until evenly distributed.
  5. Pour batter into prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While bars cool, mix cream cheese, powdered sugar, and vanilla until smooth. Frost cooled bars and cut into squares.
