- 1 teaspoon dried thyme
- 4 cups beef broth
- 5 carrots, peeled and cut into chunks
- 1 cup frozen peas
- 2 bay leaves

- Heat the olive oil in a large Dutch oven over medium-high heat.
- In a large Ziploc bag, combine the stew meat, flour, salt, black pepper, garlic powder, onion powder, fresh rosemary, and dried thyme. Shake well to coat the meat evenly.
- Add the seasoned meat to the hot oil and sear until browned on all sides.
- Gradually stir in the beef broth while mixing continuously. Add carrots and bay leaves; bring to a boil.
- Reduce heat to medium-low and cover with a lid. Simmer for about 45 minutes, stirring occasionally.
- In the last five minutes of cooking, add frozen peas and remove bay leaves before serving.
