  • 3 cups red apple vinegar
  • 3 cups beef broth
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced

  • 2 carrots, diced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 leaves fresh sage
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat the beef dry and season generously with salt and black pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef on all sides until browned (about 4-5 minutes per side). Remove from pot.
  3. In the same pot, sauté chopped onion, diced carrots, and minced garlic until softened (approx. 5 minutes).
  4. Deglaze with red apple vinegar, scraping up browned bits; simmer for 2-3 minutes.
  5. Return the beef to the pot; add beef broth and fresh herbs.
  6. Cover tightly and braise in a preheated oven at 285°F (140°C) for 2.5 to 3 hours.
  7. Let rest for 10 minutes before slicing against the grain.
