  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium head of cauliflower (approx. 2 cups florets)
  • 2 tbsp olive oil
  • Juice and zest of 2 fresh oranges
  • 3 garlic cloves, minced
  • 1 tbsp honey or maple syrup
  • 3 tbsp low-sodium soy sauce
  • Pinch of cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
  3. Cut the cauliflower into bite-sized florets and scatter them around the chicken.
  4. In a bowl, whisk together orange juice, zest, olive oil, garlic, honey or maple syrup, soy sauce, and cayenne pepper until smooth. Drizzle this mixture over the chicken and cauliflower.
