Ingredients

Scale
  • 2 cups fresh basil leaves
  • 2 garlic cloves
  • 1/3 cup pine nuts
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 1/2 cup extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and wash the basil leaves thoroughly.
  2. In a dry skillet over medium heat, toast the pine nuts until golden brown, keeping an eye on them to prevent burning.
  3. In a food processor, combine basil leaves, toasted pine nuts, garlic cloves, Parmesan cheese (or nutritional yeast), and lemon juice. Pulse until finely chopped.
  4. Slowly drizzle in the olive oil while blending until smooth and creamy.
  5. Taste and adjust seasoning with salt and pepper or additional lemon juice if desired.
  6. Serve over pasta, as a sandwich spread, or as a dip for veggies.
