  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 cups low-sodium chicken broth
  • 8 oz cream cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 6-7 minutes per side until golden brown. Remove from skillet.
  2. In the same skillet, sauté minced garlic for about one minute. Add cherry tomatoes and spinach; cook until tomatoes soften and spinach wilts.
  3. Stir in orzo and chicken broth; bring to a boil, then reduce heat to low. Simmer for about 10 minutes until orzo is tender.
  4. Mix in cream cheese and herbs until creamy and well combined.
  5. Return cooked chicken to the skillet, letting it absorb the sauce for an additional five minutes.
  6. Serve hot, drizzling extra sauce over each plate.
