Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 2 cups low-sodium chicken broth
- 8 oz cream cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Cook chicken for 6-7 minutes per side until golden brown. Remove from skillet.
- In the same skillet, sauté minced garlic for about one minute. Add cherry tomatoes and spinach; cook until tomatoes soften and spinach wilts.
- Stir in orzo and chicken broth; bring to a boil, then reduce heat to low. Simmer for about 10 minutes until orzo is tender.
- Mix in cream cheese and herbs until creamy and well combined.
- Return cooked chicken to the skillet, letting it absorb the sauce for an additional five minutes.
- Serve hot, drizzling extra sauce over each plate.
