- 1 cup fresh raspberries
- 1 cup all-purpose flour
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs (room temperature)
- 1 tbsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a mixing bowl, cream together the softened butter and sugar until smooth. Gradually add flour until crumbly. Press this mixture firmly into the bottom of the prepared pan.
- Melt dark chocolate chips in the microwave in short bursts until smooth. In another bowl, whisk eggs, cornstarch, and remaining sugar together. Fold in melted chocolate.
- Pour half of the chocolate mixture over the crust, scatter raspberries on top, and cover with the remaining chocolate mixture.
- Bake for 25-30 minutes until edges are set but center is slightly wobbly. Let cool completely before slicing into bars.
