  • 1 cup dark chocolate chips (70% cocoa)
  • 1 cup fresh raspberries
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs (room temperature)
  • 1 tbsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, cream together the softened butter and sugar until smooth. Gradually add flour until crumbly. Press this mixture firmly into the bottom of the prepared pan.
  3. Melt dark chocolate chips in the microwave in short bursts until smooth. In another bowl, whisk eggs, cornstarch, and remaining sugar together. Fold in melted chocolate.
  4. Pour half of the chocolate mixture over the crust, scatter raspberries on top, and cover with the remaining chocolate mixture.
  5. Bake for 25-30 minutes until edges are set but center is slightly wobbly. Let cool completely before slicing into bars.
