Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted

- 1 cup sour cream

- 2 tsp pure vanilla extract
- 3 large eggs
- 2 cups whole milk (for custard)

- 1 tbsp agar-agar powder
- 1 cup dark chocolate chips (for glaze)
- 2 tbsp coconut oil
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for about 10 minutes. Let cool.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, then sour cream and vanilla. Mix in eggs one at a time until just combined.
- Pour cheesecake mixture over cooled crust and bake for about an hour until slightly jiggly in the center. Turn off oven and let it cool inside for an hour.
- For the custard, heat milk in a saucepan. Whisk together sugar and agar powder; slowly add to heated milk until thickened.
- Once cooled, pour custard over the cheesecake layer; chill for at least two hours.
- Melt chocolate chips with coconut oil until smooth; pour over chilled custard layer and allow to set before slicing.
