  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar (for filling)
  • 2 tsp pure vanilla extract
  • 3 large eggs
  • 2 cups whole milk (for custard)
  • ¼ cup granulated sugar (for custard)
  • 2 tsp pure vanilla extract (for custard)
  • 1 tbsp agar-agar powder
  • 1 cup dark chocolate chips (for glaze)
  • 2 tbsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for about 10 minutes. Let cool.
  2. In a large bowl, beat cream cheese until smooth. Gradually add sugar, then sour cream and vanilla. Mix in eggs one at a time until just combined.
  3. Pour cheesecake mixture over cooled crust and bake for about an hour until slightly jiggly in the center. Turn off oven and let it cool inside for an hour.
  4. For the custard, heat milk in a saucepan. Whisk together sugar and agar powder; slowly add to heated milk until thickened.
  5. Once cooled, pour custard over the cheesecake layer; chill for at least two hours.
  6. Melt chocolate chips with coconut oil until smooth; pour over chilled custard layer and allow to set before slicing.
