- 1/2 cup brown sugar
- 1 (20 oz) can pineapple rings (packed in juice)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup pineapple juice
Instructions
- Preheat oven to 350°F (175°C). Grease ramekins or muffin tins with butter and sprinkle brown sugar at the bottom.
- Place one pineapple ring on top of the sugar in each tin.
- In a mixing bowl, beat melted butter and granulated sugar until fluffy. Add eggs one at a time, then stir in pineapple juice.
- In another bowl, whisk together flour, baking powder, and salt. Gradually combine with the wet mixture until just mixed.
- Spoon batter over each pineapple ring until three-quarters full. Bake for 20-25 minutes or until golden brown.
- Let cool for five minutes before flipping onto plates and drizzling with remaining juices.
