  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 100g feta cheese, crumbled
  • 4 cups mixed greens (arugula and spinach)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet.
  3. Roast for 25-30 minutes until golden brown and fork-tender, shaking halfway through.
