  • 1 cup ground turkey sausage (cooked)
  • 1 cup shredded sharp cheddar cheese
  • 4 flour tortillas (8-inch)
  • 2 green onions (chopped)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the ground turkey sausage until browned, about 5-7 minutes. Drain excess fat.
  2. Whisk together eggs in a bowl and season with salt and pepper.
  3. Pour eggs into the same skillet and scramble on low heat until slightly soft; remove from heat.
  4. Lay tortillas flat. Sprinkle cheese down the center, then add sausage and scrambled eggs, topped with green onions. Roll tightly.
  5. In the skillet, place roll-ups seam-side down over medium heat for 2-3 minutes until golden brown on all sides.
  6. Slice in half diagonally and serve with salsa or hot sauce.
