  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves garlic, minced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup bell peppers, chopped (red or green)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp agar-agar powder

Instructions

  1. Chop bell peppers into bite-sized pieces and mince garlic.
  2. Place chicken breasts at the bottom of the crockpot and sprinkle with minced garlic.
  3. Add pineapple chunks and bell peppers on top of the chicken.
  4. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, and agar-agar powder; pour over chicken.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred the chicken in the pot using two forks before serving.
