- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, diced
- 1 cup sliced carrots
- 1 cup sliced celery
- 6 cloves garlic, minced
- 2 tablespoons Italian seasoning
- 1 tablespoon tomato paste
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 1 (15 ounce) can dark red kidney beans, drained and rinsed
- 4 cups chicken stock
- 1 cup uncooked ditalini
- Kosher salt

- grated Parmesan for garnish
- fresh chopped parsley for garnish
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the ground beef, cooking until browned. Use a slotted spoon to remove the beef and set aside.
- In the same pot, sauté the diced onion, sliced carrots, and celery with salt and pepper for about 5 minutes until softened.
- Stir in minced garlic, Italian seasoning, and tomato paste; cook for 1 minute.
- Add tomato sauce, diced tomatoes, cannellini beans, dark red kidney beans, chicken stock, uncooked ditalini pasta, and cooked ground beef back into the pot with additional salt and pepper.
- Bring to a simmer, then reduce heat to medium-low. Simmer for about 5 minutes or until pasta is al dente.
- Adjust seasoning as needed before serving; garnish with grated Parmesan cheese and fresh parsley.
