  • 2 large onions
  • 2 medium carrots
  • 3 Yukon gold potatoes
  • 2 cloves garlic
  • 1 tbsp butter
  • 5 cups water (or stock)
  • 1 lb cubed beef (or alternative protein)
  • 8 oz Japanese curry roux
  • 1 red apple (Fuji or Honeycrisp)
  • 8 cups medium grain white rice

Instructions

  1. Chop vegetables into large chunks and mince garlic.
  2. Soak potato chunks in warm water for 15 minutes.
  3. Season beef cubes with salt; let sit for 10 minutes.
  4. Sear beef in a large pot over medium heat until browned; set aside.
  5. Melt butter in the pot; sauté onions until caramelized.
  6. Add garlic, then potatoes and carrots; stir for one minute before adding beef back.
  7. Pour in water; add grated apple, honey, ketchup, and Worcestershire sauce.
  8. Simmer covered for about 15 minutes while stirring occasionally.
  9. Skim off scum as needed; check doneness of potatoes.
  10. Gradually add curry roux, stirring to dissolve.
  11. Simmer uncovered until thickened; serve hot over rice.
