  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: chili flakes for extra heat

Instructions

  1. Gently wipe the mushrooms with a damp cloth to remove any dirt. Avoid rinsing them under water.
  2. Slice the mushrooms into uniform pieces.
  3. In a large skillet, heat the sesame oil over medium heat until it shimmers.
  4. Add the minced garlic and grated ginger to the skillet and sauté for 1-2 minutes until fragrant.
  5. Toss the sliced mushrooms into the skillet and stir well to coat them in the oil, garlic, and ginger. Cook for approximately 5-7 minutes until they become tender.
  6. In a small bowl, mix the miso paste and soy sauce with a couple of tablespoons of warm water until smooth.
  7. Pour the miso sauce over the cooked mushrooms in the skillet and stir well to ensure all mushrooms are evenly coated. Cook for another 2-3 minutes to heat through thoroughly.
  8. Taste and adjust seasoning if needed. For added heat, sprinkle in some chili flakes if desired. Remove from heat and garnish with chopped green onions and sesame seeds.
