Ingredients
- 12 ounces sweet potato glass noodles
- 16 ounces beef (cut into strips)
- 2 large eggs (beaten)
- 1 large carrot (julienned)
- 1 medium yellow onion (sliced)
- 3 mushrooms (sliced)
- 2 cups baby spinach
- 2 stalks green onion (cut into pieces)
- 7 tablespoons soy sauce (light sodium)
- 3 tablespoons honey (or more brown sugar if preferred)
- 2 tablespoons brown sugar (light or dark)
- 2 tablespoons toasted sesame oil
- Oil (for cooking)
- Salt and black pepper (as needed)
Instructions
- Mix soy sauce, honey, brown sugar, and sesame oil in a bowl to create the sauce. Set aside.
- Boil the sweet potato glass noodles in a large pot for about 10–15 minutes until cooked through. Drain and rinse under cold water; set aside.
- In a nonstick frying pan, heat oil over medium heat and cook beaten eggs to form an egg crepe. Remove and slice into thin strips.
- Add more oil to the pan and sauté beef strips until browned; set aside.
- Sauté carrots first; add onions next followed by mushrooms; finish with spinach until tender.
- Combine cooked noodles and sautéed ingredients in the pan with the sauce over low heat.
- Toss everything together until well-coated and serve warm or at room temperature.
