  • 12 oz (about 340g) fresh raspberries
  • 2 large (about 764g) fresh mangoes – cubed
  • 1 lb (about 454g) fresh strawberries – cubed
  • 1 lb (about 454g) green grapes – halved
  • 1 lb (about 454g) red grapes – halved
  • 4 cups (960ml) apple juice
  • 4 pockets (28g) original unflavored Vegan gelatin
  • 3 tablespoons (38g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • pan spray

Instructions

  1. Prepare the fruits by washing them thoroughly and cutting them into uniform sizes.
  2. Lightly spray a bundt pan with pan spray and wipe off excess.
  3. In a medium bowl, combine 1 cup of apple juice with vegan gelatin; set aside.
  4. In a small saucepan, boil the remaining apple juice with sugar and lemon juice, then pour over the gelatin mixture and whisk until dissolved; let cool.
  5. Layer the prepared fruits in the bundt pan in the following order: raspberries, mangoes, strawberries, green grapes, red grapes.
  6. Pour the cooled gelatin mixture over the layered fruits until fully covered.
  7. Refrigerate for 3-4 hours until set.
  8. To serve, dip the bundt pan briefly in hot water for easy removal and invert onto a serving plate.
