  • 4 cups powdered sugar, sifted
  • 23 tbsp key lime juice
  • 1 tsp key lime zest
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. In a bowl, cream softened butter and sugar until fluffy. Add eggs one at a time.
  3. In another bowl, combine flour, baking powder, and salt.
  4. Mix milk, lime juice, zest, and vanilla in a measuring cup.
  5. Gradually combine dry ingredients with the butter mixture and alternate with the milk mixture until just mixed.
  6. Bake for 28-32 minutes until golden and a toothpick comes out clean.
  7. For frosting, beat cream cheese with softened butter, gradually adding powdered sugar and lime juice until creamy.
