Ingredients
- 2 lbs ground beef
- 1 1/2 cups panko bread crumbs
- 1 large onion (finely diced)

- 2 tbsp gochujang
- 5 green onions (minced)
- 2 tsp kosher salt
- 2 large eggs (lightly beaten to combine)
- 2 tsp vegetable oil
- 3 tbsp apricot jam (for glaze)
- 2 tbsp gochujang (for glaze)
- 1 tbsp rice apple vinegar (for glaze)
- 1 tbsp honey (for glaze)
- 2 tsp soy sauce (for glaze)
- 1 tsp sesame oil (for glaze)
- 1/2 tsp granulated garlic powder (or 2 cloves garlic, minced for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the onions in vegetable oil until translucent; add garlic and cook for an additional 2 minutes, then cool.
- In a bowl, combine cooled onion mixture with minced green onion, gochujang, eggs, and salt.
- In another bowl, mix ground beef with panko breadcrumbs before combining both mixtures gently.
- Shape the meat mixture in a loaf pan or freeform on a baking sheet.
- Bake for about 40 minutes until the internal temperature reaches 140°F.
- Prepare the glaze by mixing apricot jam, gochujang, vinegar, honey, soy sauce, sesame oil, and garlic powder.
- Glaze the meatloaf and return it to the oven until it reaches an internal temperature of 160°F.
