  • 1 1/2 cups graham cracker crumbs
  • 32 oz cream cheese (softened)
  • 3 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup heavy whipping cream
  • Zest from 3 lemons
  • Lemon extract
  • 4 tbsp butter (melted)
  • 1/4 cup brown sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 8 oz cream cheese (softened)
  • 1 cup heavy whipping cream (cold)
  • 1 cup powdered sugar
  • 23 lemons – peel only
  • 3/4 cup water
  • 1 cup white granulated sugar
  • 2 tbsp extra fine sugar for coating

Instructions

  1. Preheat the oven to 325°F (160°C). Wrap the outside of a springform pan in aluminum foil to prevent leaks.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter; press into the bottom of the pan.
  3. Beat softened cream cheese until smooth, then gradually add sugar. Mix in eggs one at a time, followed by sour cream, heavy whipping cream, lemon zest, and extracts until blended.
  4. Pour the filling over the crust and bake for about 85 minutes or until the center is slightly jiggly.
  5. Cool at room temperature before chilling in the refrigerator for several hours or overnight.
