  • 1 lb boneless, skinless chicken breast
  • 1 tbsp fresh ginger, grated
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1 tbsp gluten-free soy sauce
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Fresh cilantro, chopped (optional)
  • 1/4 cup mayonnaise
  • 12 tsp sriracha (adjust for spice preference)

Instructions

  1. Rinse the rice under cold water until clear. Combine rice, coconut milk, water, and salt in a saucepan. Bring to a boil then cover and simmer for about 15 minutes until tender.
  2. In a bowl, mix ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper. Add chicken pieces; marinate for at least 10 minutes.
  3. Heat a skillet over medium-high heat. Cook marinated chicken for about 5–7 minutes on each side until golden brown and cooked through.
  4. In another bowl, combine pineapple, mango, red onion, lime juice, cilantro (if using), salt, and pepper to make the salsa.
  5. Whisk together mayonnaise and sriracha in a small bowl for the drizzle.
  6. Serve chicken over coconut rice topped with salsa and drizzled spicy mayo.
