  • 2 eggs
  • 1/2 cup milk
  • 1 and 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Zest from 1 lemon
  • 1 and 1/2 cups raspberries (plus extra for glaze)

Instructions

  3. Gradually mix in milk until just combined.
  4. In another bowl, combine flour, baking powder, salt, and lemon zest. Slowly incorporate this dry mixture into the wet ingredients without overmixing.
  5. Gently fold in fresh raspberries.
  6. Pour batter into a greased loaf pan and bake for 50-55 minutes or until a toothpick comes out clean.
  7. Allow cooling in the pan for 5 minutes before transferring to a rack.
  8. For the glaze, mash raspberries and strain to remove seeds; mix with powdered sugar and lemon juice until smooth.
