Ingredients

  • 1 lb (500g) tiger prawns or jumbo prawns (peeled and deveined)
  • 2 tablespoons fish sauce
  • 1 lemongrass stalk (grated white part only)
  • 1 tablespoon powdered sugar
  • 1 teaspoon Sriracha
  • 1 big clove garlic (minced)
  • 1 ½ tablespoons chili garlic sauce
  • Juice of 1 small calamansi or wedge of lime
  • Fresh parsley (for garnish)

Instructions

  1. Clean the shrimp under cold water and pat dry.
  2. In a mixing bowl, combine fish sauce, grated lemongrass, powdered sugar, Sriracha, minced garlic, chili garlic sauce, water, and lime juice. Add shrimp to the marinade and let sit for 15 minutes.
  3. Thread three shrimp onto each skewer and brush lightly with oil.
  4. Grill on medium heat for about 5-7 minutes on each side until charred and cooked through.
