- 500 ml high-proof vinegar
- 600 g sugar
- 750 ml water
Instructions
- Thoroughly wash the lemons, scrubbing the skin to remove impurities.
- Peel the lemons with a vegetable peeler, taking only the yellow zest.
- In a glass jar, combine the lemon peels with pure vinegar. Seal tightly and let it macerate in a dark place for 30 days.
- After 30 days, strain the mixture to remove lemon peels.
- In a pot, combine water and sugar, bringing it to a boil to create syrup. Allow it to cool completely.
- Mix the cooled syrup with the strained lemon infusion and let rest for an additional 40 days in a dark place before serving.
