Ingredients

Scale
  • 4 (3-ounce) mahi mahi fillets
  • 1 teaspoon adobo seasoning
  • 1 medium tomato, diced
  • ½ red onion, chopped
  • 1 cup fresh cilantro, chopped
  • 2 scallions, thinly sliced
  • 2 tablespoons lime juice
  • 8 (6-inch) corn tortillas
  • 1 avocado, sliced

Instructions

  1. Season mahi mahi fillets with adobo seasoning and a dash of lime juice.
  2. In a bowl, combine diced tomato, red onion, cilantro, scallions, and lime juice to make pico de gallo. Set aside.
  3. Spray a nonstick skillet with cooking spray and heat over medium-high heat. Cook the seasoned fish for about 2 minutes on each side until golden brown. Cover and reduce heat to low; cook for another 10 minutes until fish flakes easily.
  4. Warm corn tortillas in the microwave between damp paper towels for about 30 seconds to 1 minute.
  5. Assemble each taco by placing half a fish fillet on a tortilla, topping with avocado slices and pico de gallo.
