  • 110 g almond meal
  • 155 g confectioner's sugar
  • 90 g egg whites (3 large)
  • 55 g granulated sugar
  • ¼ teaspoon cream of tartar
  • ¼ cup freeze-dried mango (crushed)
  • ½ cup unsalted butter (softened)
  • 1½ cups powdered sugar (for filling)
  • 2 tablespoons coconut milk
  • ¼ teaspoon coconut extract

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a food processor, blend almond meal and confectioner’s sugar; sift several times.
  3. Whip egg whites with cream of tartar and granulated sugar until stiff peaks form.
  4. Gently fold dry ingredients into meringue until smooth and shiny.
  5. Pipe batter onto prepared sheets and let sit until dry (30 minutes to 2 hours).
  6. Bake for 15-20 minutes, rotate halfway through.
  7. Prepare buttercream by whipping butter, then adding remaining filling ingredients.
  8. Fill cooled macarons with the buttercream.
