  • 11/4 lbs boneless, skinless chicken thighs
  • 1/2 cup gluten-free flour
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fruit juice or vinegar (as bourbon substitute)
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons gluten-free reduced-sodium Tamari (or soy sauce if not GF)
  • 1/4 teaspoon dried rosemary

Instructions

  1. Season flour with salt and pepper in a shallow dish. Dredge each chicken thigh in seasoned flour and set aside.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs until golden brown on both sides, about 1-2 minutes per side. Remove from the skillet.
  3. In the same skillet, add fruit juice or vinegar and then the chicken broth mixture (maple syrup, chopped pecans, mustard, apple cider vinegar, tamari, and rosemary). Bring to a simmer.
  4. Nestle the seared chicken back into the skillet and cover loosely with foil. Simmer until the sauce thickens and chicken is cooked through (about 10 minutes), flipping occasionally.
  5. Serve the chicken with sauce on top.
