Ingredients
- 1–1/4 lbs boneless, skinless chicken thighs
- 1/2 cup gluten-free flour
- Salt and pepper to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fruit juice or vinegar (as bourbon substitute)
- 1 cup chicken broth
- 1/4 cup chopped pecans
- 3 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons gluten-free reduced-sodium Tamari (or soy sauce if not GF)
- 1/4 teaspoon dried rosemary
Instructions
- Season flour with salt and pepper in a shallow dish. Dredge each chicken thigh in seasoned flour and set aside.
- Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs until golden brown on both sides, about 1-2 minutes per side. Remove from the skillet.
- In the same skillet, add fruit juice or vinegar and then the chicken broth mixture (maple syrup, chopped pecans, mustard, apple cider vinegar, tamari, and rosemary). Bring to a simmer.
- Nestle the seared chicken back into the skillet and cover loosely with foil. Simmer until the sauce thickens and chicken is cooked through (about 10 minutes), flipping occasionally.
- Serve the chicken with sauce on top.
