  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon fine sea salt (plus more to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Slice the tomatoes into rounds or wedges and thinly slice the red onion.
  2. In a mixing bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup (if using), salt, and pepper until well combined.
  3. Add the sliced tomatoes and onions to the bowl and gently toss until evenly coated with the dressing.
  4. Stir in fresh herbs and capers if desired.
  5. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
