- 3/4 cup salted butter
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tbsp matcha powder
- 2 cups heavy cream
- 4 tbsp strawberry jam
- 2 1/4 tsp powdered gelatin
Instructions
- Preheat the oven to 325°F and line a 9×9 inch baking tin with parchment paper.
- Cream together butter and sugar until fluffy. Mix in vanilla extract.
- Gradually add flour and matcha to form a dough. Press into the prepared tin and poke holes for ventilation.
- Bake for 18-20 minutes until lightly browned; cool in the fridge.
- Bloom gelatin in cold water while heating cream, sugar, vanilla, salt, and strawberry jam in a skillet until dissolved (do not boil).
- Stir in bloomed gelatin and let cool slightly before pouring over cooled shortbread. Chill for at least four hours to set.
- Cut into squares and serve.
