  • 1 cup icing sugar
  • 1 stick unsalted butter (room temperature)

  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup melted dark chocolate (or white chocolate)
  • 1/4 cup chopped pistachios (or walnuts/almonds)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, dissolve instant coffee in hot water and set aside to cool.
  3. Using an electric mixer, cream together the butter and icing sugar until light and fluffy.
  4. Mix in the beaten egg and cooled coffee mixture until well combined.
  5. In another bowl, whisk together flour, cornstarch, and cinnamon. Gradually add this to the wet ingredients until just combined.
  6. Scoop tablespoon-sized portions onto the baking sheet, leaving space between cookies. Bake for about 8 minutes or until lightly golden around the edges.
  7. After cooling slightly, dip half of each cookie into melted chocolate and sprinkle with chopped pistachios.
