  • 115 g unsalted butter
  • 135 g light brown sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (170ºC fan) and line a 9×9 inch baking tray with parchment paper.
  2. In a mixing bowl, combine melted butter with light brown sugar and granulated sugar until well mixed.
  3. Add in the egg and vanilla extract, stirring until fully combined.
  4. Mix in the plain flour, cornflour, bicarbonate of soda, and salt until a smooth dough forms.
  5. Fold in the milk chocolate chips and most of the mini eggs.
  6. Press the dough evenly into the prepared baking tray and decorate with remaining mini eggs on top.
  7. Bake for 18-22 minutes until the surface appears dry.
  8. Allow to cool completely before cutting into squares.
