Ingredients
- 115 g unsalted butter
- 135 g light brown sugar
- 55 g granulated sugar
- 1 medium egg
- 1 tsp vanilla extract
- 275 g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tbsp cornflour
- 100 g milk chocolate chips
- 100–300 g mini eggs
Instructions
- Preheat your oven to 190ºC (170ºC fan) and line a 9×9 inch baking tray with parchment paper.
- In a mixing bowl, combine melted butter with light brown sugar and granulated sugar until well mixed.
- Add in the egg and vanilla extract, stirring until fully combined.
- Mix in the plain flour, cornflour, bicarbonate of soda, and salt until a smooth dough forms.
- Fold in the milk chocolate chips and most of the mini eggs.
- Press the dough evenly into the prepared baking tray and decorate with remaining mini eggs on top.
- Bake for 18-22 minutes until the surface appears dry.
- Allow to cool completely before cutting into squares.
