  • 1 tablespoon miso paste

  • 1 teaspoon black pepper
  • ½ cup reserved pasta water
  • 2 eggs
  • 2 egg yolks
  • 1 cup parmigiano reggiano cheese (plus more for garnish)
  • Fresh parsley for garnish

Instructions

  1. Cook spaghetti in a large pot of salted water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, cook turkey bacon over medium heat until crispy; set aside.
  3. In a mixing bowl, whisk together eggs, egg yolks, miso paste, chili flakes, black pepper, and half the cheese until smooth. Gradually mix in reserved hot pasta water.
  4. Combine cooked spaghetti with turkey bacon in the skillet over low heat. Quickly toss in the egg mixture to coat evenly and serve topped with remaining cheese and parsley.
